3 rice horchata recipes perfect for summer
If the traditional horchata is refreshing in itself, these versions of the drink will be the star companion of your hottest afternoons.
This drink that we have all enjoyed since we were little comes from Egypt; It has passed through Spain and other Latin American countries having various adaptations according to the ingredients of each location and season. In Mexico, like so many other recipes, it arrived with colonization.
Not only is it comforting and even nostalgic, but it refreshes us, takes away the chilliness (which we Mexicans love), and is rich in fiber, so it helps us improve digestion.

Lemon Horchata
The basis is the same; rice and cinnamon. But the flavor that the lemon gives to this horchata gives us life. We leave you the recipe here:
Ingredients
- 1 liter and 2 cups of water
- 150g of rice
- 1 slice of cinnamon
- 1 teaspoon vanilla extract
- 2 tablespoons lemon zest
- 4 tablespoons of sugar
Preparation

Soak the rice in 1 cup of water for half an hour.

In a saucepan, heat 1 cup of water over low heat.

Add the cinnamon stick, lemon zest and sugar and stir.

After about 3-5 minutes, remove from heat.

Drain the water from the rice and blend the mixture that you previously cooked with it, adding the rest of the water.

Strain the mixture making sure there are no large chunks of any ingredient left.

Add ice and serve.
Strawberry horchata

Ingredients
- 1 liter and 1 cup of water
- 150 gr of rice
- 1 cinnamon stick
- 1 teaspoon vanilla extract
- 150gr of strawberry
- 4 tablespoons of sugar
Preparation

Drain the rice water and cinnamon and blend with the rest of the water.

Strain the mixture making sure there are no large chunks of any ingredient left.

Add the rest of the ingredients and blend again; you can leave the pulp of the strawberries or not, as you prefer.

Golden Horchata
